• Coating fish with rice cones or rice flour is a common technique used by fish fryers to ensure that the batter sticks consistently to the fish and does not become soggy due to general fishy wetness. Some fish & chip shops use rice cones because it allows them to use a thinner, more delicate batter, whilst ensuring regular coverage of the fish when it goes in the deep fat fryer.
