A cake made with carrots? That's right, the moist classic country favourite, in super-easy kit form. Just add water, eggs, icing and oil or butter for an impressive homemade carrot cake. Serves 12.

Wheat Flour, Sugar, Dried Carrot (5%), Dextrose, Raising Agents (Calcium Phosphates, Sodium Carbonates), Palm Fat, Corn Starch, Emulsifiers (Propane-2-Diol Esters of Fatty Acids, Mono- and Diglycerides of Fatty Acids, Sodium Stearoyl-2-Lactylate), Salt, Stabilisers (Sodium Carboxy Methyl Cellulose, Xanthan Gum), Colour (Sulphite Ammonia Caramel), Spices, Flavouring, Flour Treatment Agent (Ascorbic Acid)

Preparation and Usage

  • Just add Eggs, Oil, Water, Icing
  • All you need is:
  • 105ml vegetable oil (7 tbsp) or 110g melted butter
  • 200ml water or 200ml milk
  • 3 medium eggs
  • Prep time 10 mins
  • Baking time 23-28 mins
  • Two 20cm cake tins or Two 12 cupcake muffin tins (and 24 cupcake cases)
  • Preheat oven to 180°C (160°C for fan assisted ovens or refer to manufacturer's instructions)/Gas Mark 4. For cupcakes use fan assisted oven 160°C.
  • Grease tins and preferably line with baking paper. For cupcakes line two 12 cup muffin tins with cupcake cases.
  • 1. Beat cake mix,eggs, water and oil (or cake mix, eggs, milk & butter) together and whisk (by hand or electric mixer) for 2-3 minutes until smooth and creamy. Do not eat unbaked batter.
  • 2. Pour into tins. For cupcakes pour mixture evenly into the cupcake cases.
  • 3. Bake for 23-28 minutes or until skewer inserted in centre comes out clean. For cupcakes bake the 2 muffin tins at the same time for 18-22 minutes. Cool for 10 minutes in tins then remove from tins.
  • Leave to cool completely, fill and ice.
